The marinade of curry paste, curry powder, coconut milk, salt, and sugar, along with the peanut sauce, creates a medley of traditional Thai flavors. As for the peanut sauce, there are some variations, but it always involves peanut butter, soy sauce, vinegar, sugar, and spices.
Another staple of Thai food is the hot and sour salad. These are warm dishes packed with flavorful ingredients. One of our favorites is yum hed, which combines mushrooms, ginger, chili, tomatoes, peanuts, scallions, onions, and lime juice. For some added protein, turn yum hed into a seafood dish by adding shrimp or scallops.
Now we get the main event: curry. Whether a curry is green or red depends on the type of chilis used to make it. Green curry has a more versatile flavor than red curry. It can easily be as spicy as red curry, but other ingredients can temper the spice. Those ingredients can also contribute to its green color. For example, you’ll often find basil and other herbs in green curry. Served over any protein—chicken, beef, tofu—or mixed vegetables, green curry is essential to enjoying central Thai cuisine.
